Honeyed Chamomile Whisky Sippers

Over the past year, health has become a big focus of mine. I’ve nixed a lot of foods (auf Wiedersehen, gluten, dairy, and soy) and I’ve limited my sugar intake drastically. But just because my diet’s changed, doesn’t mean I have. I still enjoy chips and indulge in libations – I just opt for kettle or vegetable chips and when I go for a glass of wine, I simply check the sugar content (always listed on LCBO’s site) and sip away.

Especially in the summer, enjoying a cold drink to cure what ails ya on the patio is my cup of tea (pun intended – you’ll see why in just a mo’).

It’s all about balance and awareness, and admittedly, discovering healthy alternatives to some old favorites – while frustrating at times – has been rewarding, and this simple cocktail recipe fits perfectly into the category of a “healthy indulgence”.

A refreshing twist on the hot toddy, this mellow raw honey and chamomile whisky sipper is equal parts smooth and sweetly tangy. And just like the flavour – mild and soothing – it’s fast, easy to whip-up, and makes a typical day feel special.

While this recipe makes the perfect amount for two, to be enjoyed as a mini-celebration of the work-week, it can easily be scaled up for a crowd. Since honey is a natural preservative, you can prepare a big batch for a Friday dinner party, and continue enjoying into Sunday. With no added sugars or syrups, this libation is guilt-free and arguably good for you!

And for those who want to up the fancy factor, consider using a blended chamomile tea (one with ginger, or lemongrass perhaps), toss in a touch of elderflower liqueur, and top with edible flowers.


Recipe (makes 2 cocktails):

Ingredients:
1½ cups water
1 bag Chamomile tea
2 teaspoons of raw honey
2 ounces of whiskey
squeeze of lemon juice
edible flowers and lemon wedges, for garnish (optional)

Instructions:
1. Boil water and prepare a pot of chamomile tea.
2. Let steep and cool for 10 minutes before pouring it into a decanter or beverage jug.


3. Add honey, whisky, and lemon juice.


4. Give everything a good stir (or use a shaker if you have one), and pour over ice.
5. *Optional: Add lemon slices (or amp it up by topping with elderflower liquer or edible flowers).
6. Enjoy!
